Hi,
is there a way of creating an otherwise empty DICOM file
with only information such as
PatientName=Firstname^Lastname
SeriesDescription=Ultrasound
and so forth, which I could then use with the -sef option to create
the images for OsiriX to import and then remove afterwards, the plan
of course being to try and write me a script, and perhaps even be
able to just drop the JPEGs onto the script (even if I have to learn
Automator and AppleScript -O)

I'm sorry but I'm not quite sure what you are talking about ...
You can of course create a DICOM file with only selected data elements using DCMTK tools like dump2dcm, xml2dcm or the like.
In case you want to create a DICOM image including pixel data (based on a certain IOD) you should give img2dcm a try.

I have a bunch of directories with laparoscopy photodocumentation
and use OsiriX for my XRays. Now I want to load the JPEGs into
OsiriX with as minimal manual intervention.
I have figured out how to make img2dcm do that (-sef and all).
But that means I have to manually do this. First add the info to the first
JPEG and then run the rest so it becomes one series.
I want to use a little front end to enter the demographic data manually
and then thought if I can create an "empty" DICOM with just the demographic data, I can just run the lot of the JPEGs on the "empty" DCM with the demographic data and thus create one series with all the stuff showing.
If this still doesn't make sense, maybe can you email me directly at
el at lisse.NA in German and we can sort this out in our mother tongue -O (I am an elderly Gynaecologist so not a programmer proper -O)

As you can read in the documentation of img2dcm, you could use so-called "input templates" for the patient demographics and the like.
Alternatively (or in addition), you could also use the --key (-k) option in order to add further attributes to the DICOM output file.
