I clearly understand that if, for example, I ask the server
with the following request of:
REQUEST: (0010,1000)="Martin^Tom"
INFO ON SERVER: (0010,1000)="Martin^Tomas\Martin^Tom\Martin^Tomaso"
That will generate a match.

My question is, can you ask the server using yourself a
multiple-value question? I mean:
REQUEST: (0010,1000)="Martin^Tom\Martinez^Tom"
Is this a valid request or not? I've searched over the
DICOM documentation with no luck..

To my understanding, a request message must contain a single attribute value, the only exception being those UI attributes for which "list of UID matching" is specified (see DICOM part 4, section C.2.2.2.2). In general, part 4 section C.2.2.2 is the definitive reference on matching - if it's not specified there, then it's probably not specified at all.
